Pesto Chicken Marinade and Corn Bites with Focaccia Bread


Pesto Chicken Marinade
½ - 1 Cup of homemade pesto
¼ cup rice vinegar
¼ olive oil
1 teaspoon sale
1 teaspoon sugar
Few drops of Worcestershire sauce and teriyaki sauce

Combine ingredients with 8 chicken thighs and marinade for 3 hours or up to 24 hours.

Grill Chicken on the barbeque. (I leave this part up to my husband!)

Corn Bites
3 ears of corn, husks and silks removed
2 tsp chile powder
zest of two limes (one if it's large)
1/4 stick of butter, melted
1 Tbsp mayonnaise
1 Tbsp sour cream
1 Tbsp lime juice
dash of salt

Break the ears of corn into thirds. Mix together the lime zest, chile powder, and paprika; set aside. In a separate bowl, mix together melted butter, mayonnaise, sour cream, lime juice, and of salt. Grill on the barbeque for 15-20 min and turn the corn every few minutes. Brush on the butter mixture periodically.

Focaccia Bread
I bought the bread at the grocery store and added a little salt and olive oil to the bread. Heat in the oven for 10-15 min at 350 degrees. (As soon as it is golden brown, take out)

Father's Day



Father’s Day weekend was busy, but we had a wonderful time celebrating all the fathers in our lives. Friday evening we packed up the car and headed north to visit my parents. Saturday morning, my Dad, Uncle Jack, Anthony and I played golf at Oakdale Golf and Country Club. Our golf games were not up to par, but we enjoyed each other’s company. After the round of golf, we ate lunch at the club and headed home to hang by the pool. On the way home, we took a slight detour and stopped for a local watering hole, Nino's. While there, we played a few dice games and then headed home. That evening we cooked dinner and had a relaxing night. Sunday morning we fed Giada and headed back to Fresno to spend the day with Anthony’s family. Giada spent most of the day swimming with her Dad.

Focaccia Bread Veggie Sandwhich



One of my favorite shows to watch is The Chew. Recently, they made a Vegetable Focaccia Sandwich, that looked delicious.

I didn't follow the recipe exactly so here's my modified version.
  • 1 zucchini (sliced lengthwise into 1/2 inch pieces)
  • ½ Chinese eggplant (sliced lengthwise into 1/2 inch pieces)
  • 1 red bell pepper (cut in half, stems and seeds removed)
  • A few slices from a red onion
  • 1 loaf focaccia (cut into 6 inch rectangles, sliced in half horizontally)
  • 1 recipe homemade pesto
  • extra-virgin olive oil
  • ranch
  • salt and pepper
  • brie cheese
Directions
  •  Cut and season all the vegetables with salt and pepper and drizzle with extra virgin olive oil.
  • Place the vegetables on med/high hot grill. Let char on one side, about 4 minutes and flip.
  • While the vegetables are grilling, place the focaccia bread on grill to toast. Once the bread is toasted on the outside, place it in oven with brie slices on the bread to melt.
  • To Assemble: lather focaccia in pesto and light ranch, stack veggies on top and close the sandwich.
